potato cake? thin mints? i know what thin mints are, but i hardly think thats an acceptable answer... and if someone could enlighten me about potato cake, im assuming its cake made of potatos?
mmm, pototo cake. It's similar to a hash brown. Great teaser, made me think this morning.
Potato Cakes
6 to 7 Cups Mashed Potatoes
1 Egg
Salt and Pepper
Flour
Butter or Shortening
Mix potatoes and egg together. Form into patties. Cover both sides with flour and pan fry, on medium heat until golden brown on both sides, in either shortening or butter. Season with salt and pepper if desired. There is also a "Potato Pancake" that is made very similar to this, using shredded "cooked" potatoes instead of mashed, and also onion. Now this was really fun. Also thanks for the recipe - Mom used to make them all the time, but I guess I always forgot to flour them. Neat teaser.
